Thai Chicken Skewers
“Like all things that are to be cooked on a BBQ you have to protect it from the intense and direct heat. I prefer legs and thighs cooked this way but I am mindful that many people prefer lean chicken. The skin can be removed once cooked but it is necessary to keep the flesh moist. The coconut milk and curry paste will add flavour and the oil will ensure an even cooking process.”
